From one recipe, CHEF works out a dish’s nutrition, Nutri-Score, traffic lights and allergens, and grades it A to E on all 16 environmental impacts the EU measures, not just carbon. Healthier menus and lower-impact menus usually turn out to be the same menus.

Grade every dish on your menus, from breakfast buffet to banqueting, and give guests calories, allergens and simple A–E labels.

CHEF scores all 16 EU Product Environmental Footprint indicators and turns them into one overall grade plus four that a kitchen can use. Land and water are where farming does most harm to nature, and a carbon figure never shows them.
Most kitchens and catering courses think about nutrition first, and that is a good place to start. Research across 15 food groups found that the foods linked to better health, such as whole grains, fruit, vegetables, pulses and nuts, also have some of the lowest environmental impacts, while red and processed meat score badly on both (Clark et al., PNAS 2019). CHEF shows nutrition and environment side by side, so a healthier swap shows its environmental gain too.

Where they disagree, you see it. A sugary dessert can grade well for the planet, so CHEF never folds health into the environmental grade. You see both and decide. Nutrition values are indicative, calculated from Ciqual 2025 ingredient data.

Yes. Every dish gets its nutrition per serving, Nutri-Score, UK traffic lights, UK HFSS score and allergens, free. Pro adds 57 nutrients, labels for 10 markets and PDF certificates. Nutrition comes from Ciqual 2025 (ANSES) and is indicative, so check it against supplier specifications before printing.
Usually. Whole grains, fruit, vegetables, pulses and nuts are linked to better health and also have some of the lowest environmental impacts, while red and processed meat score poorly on both (Clark et al., 2019). There are exceptions, such as sugary foods, which is why CHEF shows nutrition and environment separately.
Climate change is about a fifth of the EU’s weighting. Land use, water and nutrient pollution make up much of the rest, so a dish can be low-carbon and still score badly on land or water.
